Be Mine: Fresh Berry and Sour Cream Polka Dot Cake



I love you, I love you not…. who am I kidding?!
CAKE, I LOVE YOU!
That’s why I’m so excited about this cake! It’s not often you can enjoy a slice guilt-free, but this cake is made with wheat flour and sweetened with fresh berries and honey. Yes, it still has sugar as one of the ingredients, but this cake doesn’t have any butter, white flour, or sugary frosting on top. It doesn’t need it! I enjoyed it warmed up for breakfast, with a little protein-rich greek or coconut yogurt and a drizzle of honey! This recipe is also easy to make vegan!

Here is how you can make it:
1 cup sugar
1 1/2 cups wheat flour
3/4 tsp baking soda
3/4 tsp baking powder
1 eggs (or replace the eggs with 1/2 cup unsweetened applesauce for a vegan version)
1/2 cup almond milk
1/4 cup veg oil or coconut oil
1/2 cup boiling water
Fresh berries of your choice ( I used raspberries and blueberries)
Sour Cream (Can use vegan cream cheese too!)
Peanut butter
Honey (omit for strict vegans)
Slivered almonds
Mix all dry ingredients well, then add your wet ingredients one by one. Mix until smooth. Batter will be a bit sticky.
 

Take an 8 inch round cake pan, coat with a bit of olive oil or coconut oil and sprinkle
 enough wheat flour to coat the pan. Tap out excess flour. Arrange your berries in a heart shape, 
then using a spoon, drop little dollops of sour cream around the berries to make little polka dots! 
Pour your cake batter over the top carefully, making sure not to disturb the berries. 
Bake at 350 degrees for 30-40 minutes or until the top is firm to the touch and springs back.


Let the cake cool in the pan for 10 minutes before turning out onto a wire rack to cool completely. Once the cake has cooled, you will need to melt some peanut butter, milk and honey in a small bowl or sauce pan. I didn’t measure this part, but you want the mixture to be smooth and thin enough to pipe onto the cake. Transfer the mix into a plastic bag, and snip off a piece in the corner of the bag. Pipe the peanut butter-milk-and-honey mixture around the berries to make a more prominent heart shape. Immediately arrange your slivered almonds on the peanut butter mixture to make a visible heart!
Cut a slice, warm it up, add a dollop of yogurt and a drizzle of honey and voila!
