Healthy Yum: Vegan Bliss Truffles


I already know what you’re thinking from reading the title… healthy truffles? Sounds too good to be true, right? Well, whip up a batch yourself and just take one bite. That’s all it will take to convince you. Sounds like a challenge, you say? Definitely. I dare you to make these and try to stop yourself from eating the whole batch. Hey, even if you do, these babies are a guilt-free treat. Go ahead, indulge. 
Ingredients:
  • 1 cup walnuts
  • 1/2 cup oats
  • 1 1/2 cups dates
  • 2 tablespoons dairy-free cocoa powder
  • 1 tsp vanilla, if desired 

Coatings:
  • Dairy-free cocoa powder
  • Coconut flakes
Directions:
Toss the walnuts, oats and cocoa powder, dates and vanilla in a food processor until the mixture becomes a moist, sticky dough. Roll the mix into balls with your hands. Roll some in cocoa powder, coconut flakes or leave plain. 
Your Vegan Bliss Truffles are ready to eat! Although, I recommend sticking them in the freezer (that’s where I store them). In my opinion, they taste best this way and are a little bit chewier. 

Enjoy making this super simple treat. These make a great guilt-free snack when your sweet tooth starts to get the best of you!
