Overnight Oats in a Grab & Go Mason Jar

I'm a really busy lady. I'm actually pretty surprised that I can find the time to eat at all! Well, you know how the saying goes, "If there is will, there is a way"... and I have plenty of 'will' when it comes to eating. Being such a busy person can also cause a lot of stress, and if you aren't preparing your body nutritionally there's a good chance that all that stress will take its toll. That is why I always (always try anyway) to make sure I eat a nutritional breakfast to fuel my body before jumping into the rest of the day. However, a busy day does not typically leave much time for a leisurely sit-down meal. This is why I am loving overnight oatmeal so so so much. Prepping this filling 'grab & go' meal is insanely easy, only takes a few quality ingredients, and takes virtually no effort. What kind of excuse can you possibly come up with to not have time to make a breakfast that is insanely easy, has quality ingredients, and takes virtually no effort?! Don't answer that, just try this recipe:

Overnight Oats in a Grab & Go Mason Jar

  • 1/2 cup quick cook oatmeal, raw
  • 1-2 tsp. chia seeds
  • 1-2 tsp. flax seeds
  • 1/4 sliced fruit of your choice (I used raspberries)
  • 1 tsp. pure maple syrup (if desired)
  • 1/2 cup almond milk (you can also use other dairy free or dairy options)

Fill a mason jar with your oats and seeds and stir together to mix thoroughly. Add your almond milk, maple syrup and sliced fruit, mix thoroughly to ensure all of the oats are saturated by your almond milk. If the mixture is too thick, add more almond milk. You will want the mixture to have plenty of moisture to absorb overnight, and still be moist in the morning. Put your mason jar lid back on to seal the jar. If you have the jars and not the lids (like me) then just cover tightly with plastic wrap. Stick your jars in the fridge and leave overnight.

In the morning, grab your jars and a spoon and head out the door! Overnight oats are so easy and super yummy. Filled with the right ingredients, this easy AM meal is filled with protein, fiber and vitamin C.
