Vegetarian Hummus Pizza


Okay, so November is the month of eat 'til you burst...and then eat some more. Hey, I'm not complaining, but I figure I might as well at least try and eat healthier leading up to the holiday. I've been thinking up creative ways to pack on the veggies, and not the lbs. Of course, pizza is one of my faves. This recipe satisfies that pizza craving, without the guilt.


Ingredients:


  • 1 personal size whole wheat pizza crust (you can sub a whole wheat pita if your local market doesn't carry it)
  • Hummus
  • Diced tomatoes
  • Arugula
  • Kidney Beans 
  • Shredded carrots
  • Olive oil

Instructions:

  1. Pre-heat oven to 375 degrees
  2. Spread some hummus on your wheat crust, and top with diced tomato, arugula, kidney beans, shredded carrot and a drizzle of olive oil.
  3. Place directly on the oven rack and bake for about 10 minutes, or until crust is crispy and golden brown.
