Peanut Butter Stuffed Nutella Cookies

Hey, hey, hey Monday! Fancy meeting you here...again. I have to put something out there, even at the risk of being tarred and feathered. I actually like Mondays. I look forward to Mondays. I knowwww, but here's why: Monday is one of the only (and I mean only) days off I have with the hubby. We have weird schedules. Now, I realize that a good number of you do work on Monday, and a good number of you probably also dread Mondays. That being said, I have a deliciously sweet reason for you to change your mind about Mondays (or at least this particular Monday). 
This cookie recipe is ridiculously simple, and will take you no time at all. Perfect for even the most jam-packed Mondays, and let's be real here... Mondays are probably the day a sweet treat is needed most!

Peanut Butter Stuffed Nutella Cookies
(Slightly adapted from AGFG)


(For the cookies)
1 cup plain flour
1 cup Nutella
1 egg
A few shakes of ground cinnamon, if desired

(For the filling)
½ cup creamy peanut butter
½ cup powdered sugar

How to:

Preheat the oven to 350 degrees and line a baking sheet with parchment paper. In a bowl, combine peanut butter and sifted icing sugar and roll into balls. Set aside.

With an electric mixer in a separate bowl combine flour, Nutella and egg and mix until well combined. Divide dough into slightly larger balls than the peanut butter and flatten slightly. Place a peanut butter ball into the centre and wrap cookie dough around ball until it's covered. After placing on the cookie sheet, flatten the tops a bit with the back of a spoon. These babies don’t spread out much!

Bake for around 7-10 minutes until crisp.

These babies are reminiscent of peanut butter cups (my fave!) in cookie form. Sooo good with a glass of your favorite milk or coffee!
