Raw Peanut Butter Cups


The peanut butter and chocolate combo has always been my favorites. Needless to say, peanut butter cups have always been high on my list of favorite guilty pleasures. Imagine my excitement to find a recipe for a healthier version of this sweet and salty treat! With just a few simple, quality ingredients, a silicon mold, and the freezer, you will have a guilt free sweet that will have you wondering how your sweet tooth ever got by without them.

Raw Peanut Butter Cups
Slightly adapted from Oh She Glows 3 Layer Dream Cups


Base layer:
3 tablespoons melted coconut oil

Middle layer:
1/4 cup creamy unsalted peanut butter
2 tablespoons coconut oil, softened
1/2 tsp vanilla

Top Layer:
1/4 cup coconut oil
1/4 cup unsweetened cocoa powder
2 tablespoons maple syrup
pinch of sea salt
2 -3 tablespoons of fine shredded coconut


1. Melt coconut oil in the micro until liquid. Spoon 1 tsp. melted coconut oil into each mold. Place in the freezer until solid.
2. In a separate bowl, mix together all of the ingredients for the middle peanut butter layer. Spoon evenly over your frozen coconut oil in your silicon molds. Place back into the freezer while you make the top layer.
3. Melt 1/4 cup coconut oil in a small saucepan over low heat until smooth. Remove from heat and whisk in cocoa powder, maple syrup and sea salt. Spoon the mixture evenly over the two frozen layers, sprinkle generously with coconut, and place back into the freezer for at least one hour.
4. Carefully remove each layered treat and store in a ziplock bag in the freezer until ready to enjoy.

These are super addiction and absolutely delicious!
