4 Ingredient Ice Cream (It's Healthy!!)


Mid-week slump got you down? This simple recipe is sure to perk you right up for three reasons: #1, it's ice cream. #2, it's healthy. #3, it doesn't taste like typical "healthy" ice cream. It tastes like ice cream, ice cream. Yeah baby. Plus, you can make it in a blender or food processor in minutes, flat! No churning, no hassle. There is no added sugar, it's dairy free, and you can make dozens of different flavors! Make some tonight. You'll really feel like you're indulging, without the guilt. This whole mid-week thing is really looking up, huh?



Ingredients:

Ripe banana, sliced and frozen ahead
Natural peanut butter (salt free, sugar free...just peanuts)
Almond milk (I love Almond Breeze Unsweetened Vanilla)
Cinnamon

**These are the ingredients I used. The peanut butter helps make it really thick and creamy, but be creative with your own alternatives.



Directions:

Slice ripe banana and freeze ahead of time, preferably overnight. Using a blender, or food processor (I used the Magic Bullet), blend one whole banana, a few spoonfuls of peanut butter (I used crunchy), a splash of almond milk, and dash of cinnamon. Blend until smooth and creamy. Add more almond milk if mixture is way too thick. The end result should be like a thick milkshake (think Frosties from Wendy's). Line a loaf pan with parchment paper, and pour your frozen mixture evenly into the pan. Place in the freezer for at least 30 minutes. Once the mixture had hardened a bit, go ahead and scoop some into a bowl and enjoy! I enjoyed mine with a melted mixture of unsweetened chocolate chips and peanut butter to create hot fudge! Topped it off with fresh raspberries :)



My best tip is to let it sit out on the counter for a few minutes to soften up before scooping. Add cocoa for a chocolate version, or fresh strawberries and mint to change up the flavors! Banana and rosemary anyone? The possibilities are endless!
