Peanut Butter S'mOreo Brownies (Yeah, that's right.)

Sometimes, you just have one of those days...that turns into one of those weeks. You know, the kind that leaves you eating straight out of the ice cream carton, on the kitchen floor, in the middle of the night after binge-watching Alias on Netflix for 3-5 hours straight, karate kicking the air and imagining that you are punching your problems in the face, Sydney Bristow style? No? You've never done that? Just me? OK, whatever.

Anyway, I was having one of those days, and I had no ice cream in the freezer. So, I did what any adult person would do at 2 am, and started baking. I needed chocolate, stat. Something gooey and chewy, STAT. My first thought was brownies, but I knew that a situation like this couldn't be rectified with just any old brownie recipe. I dug deep (into the cupboards, fridge and freezer), and struck gold: Oreos. Yessss. I could have stopped there. Oreo brownies are pretty magnificent on their own, but I had bigger dreams. Dreams of dark chocolate brownies packed with oreos, topped with peanut butter, topped with marshmallow, topped with graham cracker. Just take a moment to let that sentence sink in.


1 1/4 cups dark chocolate chips
1/2 cup (1 stick) butter
1 cup sugar
1 tsp vanilla
1 tsp salt
2 eggs
3/4 cup flour
10 or so oreos
5 or so large marshmallows
Peanut butter
Graham cracker


Fill a pot about 1/4 way full with water. Place a heat-safe glass bowl over the top, making sure that the bottom of the bowl doesn't touch the water. The bowl should sit on top of the pot, basically, not in the pot. Place your butter and chocolate into the bowl, and bring the water below to a simmer. Stir frequently to make sure nothing burns. Continue until the butter and chocolate are melted and combined smoothly. Remove the bow from heat being careful not to be burned by the steam that will escape from the pot below! Stir in the sugar with a wire whisk until smooth. Add in the eggs, one at a time. Stir in the vanilla and salt. Gently mix in the flour, trying not to over-mix. Generously butter a 9 inch baking dish or glass pie dish. Pour in 1/4 of the brownie batter. Place Oreos evenly on top of the batter. Drop a dollop of peanut butter on top of each Oreo. Cut large marshmallows in half. Place one half of a marshmallow on top of each dollop of peanut butter. Break off smaller pieces of graham cracker, and place on top of the marshmallows. Pour the rest of the brownie batter on top, making sure to cover the S'mOreos. Bake at 350 degrees for about 30-40 minutes or until a knife inserted in the middle comes out clean.

Let the brownies cool completely before cutting.
