Baked Vegan Chocolate Donut Party



I am not Vegan, but I often find that Vegan versions of my favorite treats are just as good (if not better) than the non-vegan version. Also, I am always running out of butter and eggs at the most inconvenient times (like when I wake up craving something sweet for breakfast). Vegan treats are a great alternative when I just can't convince myself to change out of my pjs to pick up a few items. The discovery of this seriously yum chocolate donut recipe really helps to justify my laziness ;) 

Ingredients:

For the donuts:
  • 1 cup all purpose baking flour
  • 1/2 cup dark brown sugar
  • 1/2 teaspoon salt
  • 1/4 cup cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1/2 cup unsweetened apple sauce
  • 3 tablespoons coconut oil, at room temperature
  • 6 tablespoons almond milk
For the glaze:
  • 1 cup vegan chocolate chips
  • 3 tblsp. almond milk
  • 1/2 cup powdered sugar

Directions:

Preheat oven to 350 degrees. Lightly grease a doughnut pan and set aside. In a large bowl, whisk together the dry ingredients. In a separate bowl whisk together the wet ingredients, then gently pour them into the dry ones. Fold ingredients together until just combined. Spoon mixture into prepared doughnut pan, and bake for 13 – 15 minutes, or until the doughnuts spring back when lightly pressed. Allow doughnuts to cool a few minutes in the pan before transferring to a cooling rack. Prepare the chocolate glaze while the donuts finish cooling. Lay out a sheet of parchment paper (you'll use it for your freshly dipped donuts). 
In a small saucepan, heat almond milk just until it begins to simmer. Remove from heat and whisk in chocolate until completely smooth. Whisk in confectioners sugar. Dip each cooled doughnut into the warm chocolate topping and any desired toppings. Place on parchment paper to set. 
You may have noticed that I used some toppings that are not vegan. Of course, you can use whatever vegan or non-vegan toppings as you see fit!
