Be Your Own Barista: Salted Caramel Iced Latte


The weekend may be over, but it doesn't have to mean that the weekend fun has to end! After all, #weekendersneverdie. One of my favorite things about weekends are the treats! Specialty coffees are my go-to weekend treat, and right now I am into salted caramel. There are only a handful of places that make it, and even fewer that do it just right. Just right for me, is over ice and lightly sweet. I took it upon myself to try and recreate this treat at home, to have readily available - weekend or not.

Salted caramel base:

Makes enough for two servings

1/2 cup unsweetened vanilla almond milk (or other milk of choice with 1/2 tsp vanilla)
1/8 cup golden brown sugar
1 tsp. sea salt

Espresso and milk:

4 shots of espresso
Unsweetened vanilla almond milk (or other milk of choice)



Directions:

In a small sauce pan, heat the almond milk over med-low until hot. Whisk in the brown sugar and salt until dissolved with no clumps. Bring to a light boil for about 1 minute. Remove from heat and let cool before chilling in the fridge. Make your espresso and let chill in the fridge. Fill two glasses with ice, and divide the chilled salted caramel mixture between the two glasses. Fill the glasses 3/4 way full with milk. Pour two shots of chilled espresso over the top of each glass. Stir, and enjoy!

You can make the salted caramel base ahead of time and store in a beverage container or mason jar in the fridge. That way, you can brew some espresso, and have a weekend-worthy treat in a pinch, any day of the week!
