Baked Pumpkin Spice Donuts

I don't know what it is about Mondays that makes me want a donut, but honestly I donut care (sorry)! Being that it is the first day of November, and we are nearing everyone's favorite pumpkin-treat-filled holiday, I thought this recipe would be welcomed with open arms. Now, I know that everyone is still probably a bit chocolate-wasted from Halloween, but these are baked soooo they're healthy... ok not healthy but better than your average donut!

For the donuts:
1 3/4 cups flour
1 1/2 tsp. baking powder
1/2 tsp. salt
1 tsp. cinnamon
1 tsp. pumpkin pie spice
1/3 cup coconut oil
1/2 cup brown sugar
1 egg
1 1/2 tsp. vanilla
3/4 can organic pumpkin (not pumpkin pie mix)
1/2 cup milk

For the coating:
1/2 cup butter (I used Earth Balance coconut oil butter)
2/3 cup white sugar
1-2 tsp. cinnamon


Preheat the oven to 350 degrees. Spray a donut pant with cooking spray and set aside. In a medium bowl, mix together the dry ingredients and set aside. In a large bowl, whisk together the brown sugar and wet ingredients. Slowly add in the dry ingredients and mix until just combined. Spoon the batter into your prepared donut pan, almost full but not right to the top. Bake for 8-9 minutes or until the donuts spring back when touched. Transfer the donuts to a cooling rack while you prepare the coating. Melt butter in one bowl and set aside. Mix sugar and cinnamon together in a separate bowl. Dip each donut in butter, and then toss into the cinnamon-sugar mixture, coating well.

I left some of the donuts plain, and they were so yummy dipped in coffee :)
