PB&J Bubble Waffles


I really want to like waffles, but I've always been more of a pancake person.... until I discovered bubble waffles. Bubble waffles are like the love child of pancakes and waffles. You make them in a waffle iron, but they are soft and pillowy like pancakes. They are so soft and delicious, you can totally enjoy them plain... but fill them with mixed berry chia seed jam and forget about it.


For the waffles:
makes about 3 waffles

Bubble waffle iron - I got this one from Amazon
2 eggs (separate the yolks and egg whites in separate bowls)
3/4 cup all purpose flour
1/4 cup coconut sugar (sub with white sugar if you prefer)
1 tsp. baking powder
1/4 cup plus 2 tblsp. unsweetened vanilla almond milk (sub with any milk you prefer)
3 tblsp. coconut oil, melted
1 generous scoop of natural, creamy peanut butter

Directions:

Separate the egg yolks and whites into separate bowls. Set the egg whites aside. Sift the flour, sugar and baking powder together into a medium mixing bowl. Add in the egg yolks, peanut butter and milk and stir to combine. Stir in the melted coconut oil. Whisk the egg whites you placed aside and whisk until they are frothy. Gently fold in the egg whites until just combined. Dollop about 1/2 cup of batter into your heated waffle iron, and remove when the light turns green. Set your waffles aside and make your chia seed jam.




For the mixed berry chia jam
makes about 1 cup

1 cup frozen mixed berries
1-2 tblsp. coconut sugar
1 tsp. vanilla
A splash of water
1 tblsp. chia seed

Directions:

In a small sauce pan, combine the first four ingredients and let simmer over low heat. When the berries start to soften, smash them with a fork. Add in the chia seeds and continue to simmer until the chia seeds begin to thicken the mixture. Remove from heat and let cool for a few minutes before spooning over your waffles.



My favorite way to eat them is to fold them over like a taco :)
