Healthy Coconut Flour Baked Donuts

I love donuts! Or rather, the idea of donuts. Everything about them is so appealing: the size, color, sprinkles! Buuuut, I always feel icky after eating one. They're very pretty, but pretty bad for you. As a woman who is always up for a 'have your cake, and eat it too' challenge, I'm happy to share this  healthy version of everyone's favorite treat of the moment.

These are super soft, moist, and delish. I won't lie, I ate 3 total. 2 crumbled when I was removing them from the pan, and I couldn't let them go to waste ;] Plus, I had to try the finished product too so... there ya go. I regret nothing. Made with coconut flour, no refined sugar or butter! I did opt to top mine with a little whipped cream and fresh strawberry, but they are totally amazing all on their own.

  • 1/8 cup of coconut oil, melted
  • 1/8 cup of honey, melted
  • 1 ripe bananas
  • 1/4 cup of coconut flour
  • 3 eggs
  • 2 tablespoons of milk (I used almond milk), plus more if needed
  • 1/4 teaspoon of cinnamon
  • 1 teaspoon of baking powder
  • Fresh blueberries (optional)
  • Fresh strawberries 
  • Whipped cream or coconut cream
  1. Pre-heat oven to 400 degrees F.
  2. Melt the coconut oil and honey and add to a blender.
  3. Add in all of the remaining ingredients MINUS the blueberries and process until the mixture is fully combined. Add in more milk (1 tablespoon at a time) if the mixture is overly thick. 
  4. Pour the batter into a well greased (with coconut oil) donut pan
  5. Drop some blueberries into the batter of each prepared donut
  6. Bake for 15-20 minutes or until golden brown and a tooth pick comes out clean. 
  7. Let cool in pan for 10 minutes before turning out onto a cooling rack. 
  8. Cool completely and dust with a little confectioners sugar or whipped cream and a fresh strawberry

These are so yummy, and satisfying without leaving you feeling heavy. Woot woot!
